Vegan Kimchi Stew (Kimchi Jjigae)

    • Ingredients: 2 cups vegan kimchi, 1 block of tofu, 4 cups vegetable broth, 1 tbsp red pepper powder, 1 tsp minced garlic

    • Recipe:

      1. Heat vegetable broth in a pot.

      2. Add vegan kimchi, red pepper powder, and minced garlic. Boil for 5 minutes.

      3. Cut tofu into large cubes, add to the pot, and simmer on low heat for 10 minutes.

    • Tip: Add glass noodles for a heartier meal, and leftover kimchi works perfectly for this dish.
